LeanCrans Asian Slaw

For the Salad:
3 heads Napa cabbage, shaved thin
3 each Granny Smith apples, diced
3 each Asian pears, diced
1 medium jicama, diced
3 cups LeanCrans® Reduced Sugar Dried Cranberries

For the Dressing:
4 oz. white miso paste
5 oz. low sodium soy sauce
3 cups pickled ginger
5 oz. brown sugar
4 cloves garlic
20 oz. rice wine vinegar
10 oz. sesame oil
1 large Vidalia onion, diced

For Garnish:
Crushed Ramen noodles, as needed
Salted cashew nuts


1. In a blender combine all dressing ingredients, excluding the diced onion.
2. Puree all dressing ingredients until properly combined.
3. Fold diced onion into the dressing and allow to sit.
4. In a large mixing bowl assemble all ingredients for the salad.
5. Dress with the desired amount of dressing.
6. Arrange salad in a bowl and garnish with the noodles and cashew nuts.
