Honey Soy Salmon a la Cape Cod


Serves 4

2 lbs. salmon filets (wild caught)
½ cup Paradise Meadow® sweetened dried cranberries
1 tablespoon honey
1 tablespoon tamari sauce or Braggs Amino Acids
1 tablespoon of extra virgin olive oil
Pepper to taste


Preheat oven to 400 degrees.

Combine all of the ingredients, except the salmon, in a food processor or blender and puree until smooth. Place the olive oil in the bottom of an oven proof casserole dish large enough for the salmon filets. Place the filets in this dish and cover with the marinade. Cover the dish and refrigerate for one hour.

Remove the dish from the refrigerator and let stand at room temperature for approximately thirty minutes. Place the dish in the preheated oven and cook for approximately 15 minutes until the fish flakes easily with a fork and is warm in the center.
