Cranberries and Brown Rice

Cranberries and Brown Rice


Serves 4

1 cup whole grain brown rice
2 ¼ cups of water
1 teaspoon sea salt
½ cup Paradise Meadow® sweetened dried cranberries
¼ cup walnuts, chopped (optional)


Combine the rice and the water in a saucepan and bring to a boil. Add the rice, stirring once, cover and reduce the heat and simmer until all of the broth is absorbed, approximately 50 minutes. Remove from the heat and let sit, covered, for an additional 10 minutes. Add the cranberries and walnuts; fluff with fork.
