Basic Cranberry Chutney

Basic Cranberry Chutney

Yields 6 pints


4 cups Paradise Meadow® fresh cranberries
2 oranges
2 apples, cored
1 cup golden raisins
1 cup brown sugar
¼ teaspoon freshly grated ginger
2 tablespoons crystallized ginger, chopped
2 tablespoons onion, finely minced
¼ cup green pepper, chopped


Place all of the ingredients in a food processor and pulse until well mixed. Remove to large bowl, cover and refrigerate several hours or overnight before serving.  For long term storage, chutney can be placed in sterilized canning jars and a hot water process.
