Cranberry Walnut Chicken Salad

Serves 2 to 4


  • 1⁄2 pound of cooked chicken, shredded
  • 1⁄4 cup of diced celery
  • 1⁄4 cup of diced onion
  • 1⁄4 cup of Paradise Meadow® sweetened dried cranberries
  • 1⁄4 cup of chopped walnuts
  • 2 to 3 tablespoons of mayonnaise (to desired consistency)
  • Salt and pepper to taste


Combine all ingredients and chill several hours to blend the flavors. Excellent as a sandwich on fresh bread or rolls, or served on lettuce leaves for a lighter luncheon dish.
