Cranberry Ice Cream

Cranberry Ice Cream

Serves 6


  • 1 cup Paradise Meadow® fresh or frozen cranberries
  • 3⁄4 cup granulated sugar
  • 1⁄4 cup water
  • 1 pint of vanilla ice cream, softened


In a small saucepan combine the cranberries, sugar and water. Ring this to a boil over high heat and reduce the heat and simmer for ten minutes. Remove from the heat and let cool completely. Place the pint of ice cream in a large bowl and add the cranberry mixture, stirring well to blend. Place this in the freezer for one hour or until thoroughly frozen.
