Cranberry Apple Chicken Salad

Serves 10


  • 1⁄2 cup of plain yogurt
  • 2 tablespoons of mayonnaise
  • 1 tablespoon of honey
  • 2 1⁄2 cups of boneless chicken, cooked, skinned and cubed
  • 1⁄2 cup Paradise Meadow® sweetened dried cranberries
  • 1 stalk of celery, chopped
  • 1⁄4 cup of chopped red onion
  • 2 tablespoons of chopped walnuts
  • 2 medium granny smith apples, sliced
  • 4 iceberg or Bib lettuce leaves


Whisk together the yogurt, mayonnaise and honey in a medium bowl. Stir in the chicken and blend well. Place the lettuce leaves on salad plates and place one scoop (approximately 1⁄4 cup) of chicken salad mix on each lettuce leaf and garnish with the apples. This can also be arranged on a platter to serve as part of a buffet.
