Basic Cranberry Bread

Serves 12


  • 2 tablespoons butter, softened
  • 1 cup sugar
  • 1 tablespoon of lemon zest
  • 3/4 cup orange juice
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1 cup Paradise Meadow® fresh or frozen cranberries, coarsely chopped


Preheat the oven to 350 degree and grease and flour one loaf pan or line 12 muffin cups with paper liners.
In a large bowl whisk together the dry ingredients. In a separate bowl, cream together the butter and the sugar. Add the grated lemon zest, orange juice and egg and mix thoroughly. Gradually
add this to the dry ingredients and beat until smooth but do not over mix. Stir in the cranberries. Place batter in a loaf pan or muffin cups and bake for approximately 55 minutes for the bread and
30 minutes for the muffins. Muffins and bread are done when a toothpick inserted in the center comes out clean.
