Spinach Goat Cheese Cranberry Salad
Ingredients
Serves 6 to 8
10 oz. bag of baby spinach leaves
¼ lb. of goat, gorgonzola or feta cheese
¼ cup Paradise Meadow® Sweetened Dried Cranberries
1/2 cup walnuts, halved
Poppy Seed dressing (below)
Directions
Combine spinach, cheese, cranberries and walnuts in a bowl. Toss with Poppy Seed dressing just prior to serving or serve on side.
Poppy Seed Dressing
1/4 cup sugar
1 tablespoon poppy seeds
¼ cup red wine vinegar
¼ cup extra virgin olive oil
Combine all ingredients in a blender or whisk thoroughly to combine. Chill.
