Cranberry Walnut Chicken Salad
Serves 2 to 4
Ingredients
- 1⁄2 pound of cooked chicken, shredded
- 1⁄4 cup of diced celery
- 1⁄4 cup of diced onion
- 1⁄4 cup of Paradise Meadow® sweetened dried cranberries
- 1⁄4 cup of chopped walnuts
- 2 to 3 tablespoons of mayonnaise (to desired consistency)
- Salt and pepper to taste
Directions
Combine all ingredients and chill several hours to blend the flavors. Excellent as a sandwich on fresh bread or rolls, or served on lettuce leaves for a lighter luncheon dish.
